Wasabi & parsley tabbouleh

Ingredients

Serves: 2 people

  • 2 bunches Parsley | chopped
  • 1 bunch Wasabi Rocket | leaves picked
  • 100g fine bulgur | cooked
  • 10 radishes | quartered
  • 10 cherry tomatoes | quartered
  • ½ lemon

Preparation

STEPS

  1. In a salad dish, toss together the bulgur, radish and cherry tomatoes.
  2. In a small bowl, zest and juice the lemon and combine with 1 tbsp olive oil and salt.
  3. Add the wasabi rocket and parsley to the salad, drizzle the dressing and mix carefully.

Tip

Keep your leaves fresh in 2cm (1 inch) of water and plenty of light.
