Spicy leafy greens

Ingredients

Serves: 2 people

  • 1 bunch Spicy Leafy Greens
  • 2 small sweet potatoes | 1cm rounds
  • 100g mangetout or green beans | blanched
  • 2 tbsp sesame seeds

DRESSING

  • 1 bunch Coriander | chopped
  • 2 small limes | juiced
  • 2 tbsp soy sauce
  • 1 red chilli | minced
  • 1 thumb ginger | grated
  • 1 clove garlic | grated

Preparation

STEPS

  1. In a pot with a few cm of water, steam sweet potato rounds until tender, just over 15 mins.
  2. To make the dressing, shake together the lime, chilli, coriander, soy, ginger and garlic until combined.
  3. In a bowl, scatter the greens, top with the veggies, a good drizzle of dressing, and the sesame seeds.

Tip

Keep your leaves fresh in 2cm (1 inch) of water and plenty of light.
