Salad trio w/beetroot
& feta

Ingredients

Serves: 2 people

  • 1 bunch Salad Trio | roughly torn
  • 1 medium beetroot
  • 50g feta cheese
  • 50g walnuts | roughly chopped

DRESSING

  • 1 sprig Thyme | leaves
  • 3 tbsp white wine vinegar
  • 6 tbsp quality olive oil
  • ½ tsp brown sugar
  • 1 tsp Dijon mustard
  • Sea salt to taste

Preparation

STEPS

  1. Roast the beetroot, unpeeled, at the highest temperature for 1h, or until the skin is almost burnt.
  2. Once cool enough, peel the beetroot and cut into quarters.
  3. Add all the dressing ingredients to a jar with a lid, and shake well.
  4. Add salad to a plate, top with beetroot and walnuts, pour dressing and crumbled feta.

Tip

Keep your leaves fresh in 2cm (1 inch) of water and plenty of light.
