Sage roasted potatoes

Ingredients

Serves: 2 people

  • 1 bunch Sage | leaves picked
  • 500g floury potatoes
  • 4 cloves garlic
  • Sea salt & cracked black pepper

Preparation

STEPS

  1. Cut the potatoes into generous chunks, then parboil for 15 mins before draining.
  2. Spread chunks on a baking tray, then mix in sage, garlic, 2 tbsp olive oil, a good pinch of salt, and pepper.
  3. Now use the base of a heavy pan to lightly squish the potatoes – they don't have to be completely flat.
  4. Heat oven to 200ºC and roast for around 40-45 mins, or until golden and crisp.

Tip

Keep your leaves fresh in 2cm (1 inch) of water and plenty of light.
