Red romaine festive salad


Sweet, crunchy and juicy. This merry salad is perfectly festive.

Serves: 2 people

  • 2 Infarm Red Romaines
  • 2 clementines, segmented
  • 2 tbsp. (30 ml) pistachios, toasted
  • 3 ounces (84 g) dates, pitted and quartered
  • 1 tbsp. (15 ml) Pomegranate seeds (optional)
  • ½ medium red onion, thinly sliced
  • 3 tbsp. (45 ml) olive oil
  • 2 tbsp. (30 ml) white wine vinegar
  • 1 tbsp. (15 ml) Dijon mustard
  • 1 tbsp. (15 ml) maple syrup
  • 1 small garlic clove, grated
  • ¼ tsp. (1 ml) fine sea salt, to taste
  • Freshly ground black pepper, to taste


PuIn a jar, combine the oil, vinegar, mustard, maple, garlic, salt and pepper and shake well until the ingredients are completely mixed together.
Just before serving gently toss the lettuce leaves, clementine, onion and dressing together.
Sprinkle the pistachios and pomegranate seeds on top (optional).


Keep your leaves fresh in 2cm (1 inch) of water and plenty of light.
