Microgreen salad on toast

Ingredients

FOR 6 TOASTS

  • 2 packs Microgreens
  • 100g quinoa | cooked
  • 1 small beetroot | diced
  • 1 carrot | in matchsticks
  • 1 red onion | thinly sliced
  • 1 kohlrabi | in matchsticks
  • 8 cherry tomatoes | quartered
  • 1 lemon

Preparation

STEPS

  1. Place quinoa, carrot, kohlrabi, beetroot, red onion and cherry tomatoes in a bowl.
  2. Cut the microgreens from their roots and add to the bowl.
  3. Squeeze the lemon over the salad along with 3 tbsp olive oil and seasoning.
  4. Toss gently before serving over a creamy avocado toast.

Tip

Keep your leaves fresh in 2cm (1 inch) of water and plenty of light.
