Chive yoghurt dressing

Ingredients

YIELDS ½ CUP (120ml)

  • 1 bunch Chives
  • 1 bunch Parsley or Dill
  • 1 small clove garlic
  • 2 tbsp fresh lemon juice
  • 2 tsp Dijon mustard
  • 4 tbsp Greek yoghurt or sour cream

Preparation

STEPS

  1. With a sharp knife, mince the herbs. Peel and grate the garlic clove.
  2. Add both to a jar with a lid, along with lemon juice, 2 tbsp olive oil, mustard, yoghurt and salt.
  3. Shake well until combined and creamy.
  4. Spoon over a baked potato, or a fresh tomato and cucumber salad.

Tip

Keep your leaves fresh in 2cm (1 inch) of water and plenty of light.
